Baked Zucchini Chips

Baked chips are a good alternative to regular fried chips. Add a wholesome vegetable and all is good. With this recipe I used zucchini. Zucchini is a good source of potassium, vitamin C, folate, vitamin A, beta carotene, and lutein. Beta-carotene and lutein are carotenoids that give food it's bright color, and also act as an antioxidant.



Makes ~40 chips

Ingredients:

  • 1-2 large sized zucchini

  • 3 Tbsp olive oil

  • 2 Tbsp whole grain oat flour

  • 1/3 cup parmesan cheese

  • 2 tsp garlic powder

  • 2 tsp salt and pepper

Directions:

  • Preheat oven to 450 degrees F

  • Wash and cut zucchini into thick slices (1/2 inch)

  • Add olive oil to a small bowl with seasonings

  • In another bowl add dry ingredients - flour and parmesan cheese

  • Toss zucchini in olive oil

  • Than toss into flour and parmesan mix

  • On a flat baking sheet sprayed lightly with cooking spray, lay zucchini flat and spread out

  • Bake for 20-25 minutes or until golden brown

  • Allow to cool down

Make these extra crispy by leaving in the oven for another 5 minutes. Be careful not to overcook or burn.
