Baked chips are a good alternative to regular fried chips. Add a wholesome vegetable and all is good. With this recipe I used zucchini. Zucchini is a good source of potassium, vitamin C, folate, vitamin A, beta carotene, and lutein. Beta-carotene and lutein are carotenoids that give food it's bright color, and also act as an antioxidant.
Makes ~40 chips
Ingredients:
1-2 large sized zucchini
3 Tbsp olive oil
2 Tbsp whole grain oat flour
1/3 cup parmesan cheese
2 tsp garlic powder
2 tsp salt and pepper
Directions:
Preheat oven to 450 degrees F
Wash and cut zucchini into thick slices (1/2 inch)
Add olive oil to a small bowl with seasonings
In another bowl add dry ingredients - flour and parmesan cheese
Toss zucchini in olive oil
Than toss into flour and parmesan mix
On a flat baking sheet sprayed lightly with cooking spray, lay zucchini flat and spread out
Bake for 20-25 minutes or until golden brown
Allow to cool down

Make these extra crispy by leaving in the oven for another 5 minutes. Be careful not to overcook or burn.
