Dried Cherry + Chocolate Energy Bites

These little bites are packed with nutrition and taste great! Easy to make, store, and snack on today.



Makes about 20 Bites


Ingredients

  • 1 cup (dry) oatmeal

  • 3 Tbsp peanut butter

  • 1/2 of dark chocolate chips

  • 1 cup dried cherry blend

  • 1/2 chopped pecans

  • 1/3 cup honey

  • 1 tbsp chia seeds (*soaked in 1/4 cup of almond milk)

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 cup shredded coconut


Directions:

  1. In a food processor, chop the dried cherry blend and pecans together (add a splash of honey or milk for moisture)

  2. In a medium bowl, add rest of all ingredients and stir until well combined. Cover bowl and let chill in refrigerator for about 1/2 an hour

  3. Once chilled, roll the mixture into small bites and/or desired size

  4. Roll into shredded coconut or chopped nuts (your choice)

Nutrition Information per Bite:

Calories 72, Protein 2 grams, Fat 4 grams - 2 grams of Monounsaturated Fat, Carbohydrate 8 grams, Dietary Fiber 1 gram. Has some source of Calcium, Phosphorus, and Potassium.


*soaking chia seeds in milk for 10 minutes allows for the seed to expand and enhance its potency
