These little bites are packed with nutrition and taste great! Easy to make, store, and snack on today.

Makes about 20 Bites
Ingredients
1 cup (dry) oatmeal
3 Tbsp peanut butter
1/2 of dark chocolate chips
1 cup dried cherry blend
1/2 chopped pecans
1/3 cup honey
1 tbsp chia seeds (*soaked in 1/4 cup of almond milk)
1 tsp vanilla extract
1/2 tsp cinnamon
1 cup shredded coconut
Directions:
In a food processor, chop the dried cherry blend and pecans together (add a splash of honey or milk for moisture)
In a medium bowl, add rest of all ingredients and stir until well combined. Cover bowl and let chill in refrigerator for about 1/2 an hour
Once chilled, roll the mixture into small bites and/or desired size
Roll into shredded coconut or chopped nuts (your choice)
